The aim of the project is to test the reliability of a portable sensor for consumers for the detection of gluten. For this purpose, homogeneous and inhomogeneous samples with defined gluten contents from different food categories will be prepared in order to reliably evaluate the sensitivity, specificity and reproducible detection of gluten using the sensor. For comparison, all samples will also be analysed with ELISA test kits.
